Orange Chicken
This recipe needs at least four bowls.
Ingredients
- 1/2kgr chicken breasts
Marinade
- 30g or 2Tbsp soy sauce
- 30g or 2Tbsp mirin
- 3g or 1tsp corn starch
- 4g or 1tsp baking soda
Breading and frying
- 400g all purpose flour
- 15g salt
- 6g baking soda
- 400g corn starch
- Water
- Additional flour (about 350g)
- Neutral oil
Sauce
- Oil
- 2 cloves garlic
- 10g piece ginger
- 20g scalions
- 125g chicken stock
- 75g mirin
- 50g soy sauce
- 10g sesame oil
- 50g sugar
- 25g rice vinegar
- Juice of 1 large orange
- 1tsp orange zest
- 5g or 2tsp corn starch
- Pinch Chile flake
- Corn starch slurry if needed
Steps
Marinating the chicken
- In a bowl, whisk together the marinade ingredients.
- Cut chicken breasts.
- Add chicken chunks to marinade.
- Marinate for 20 minutes.
The breading
- In a bowl, add from the breading ingredients:
- flour, salt, baking soda, corn starch
- Mix
- In a third bowl, add around ΒΌ of this dry mixture
- In the third bowl add water until loose pancake consistency.
- Take a few spoons of the batter into the dry bowl (the third into the second)
- Mix and crumble
- In a fourth bowl, add 350 gr of flour
Preparing the sauce for later
- Zest the orange
- Juice the orange
- Warm a big nonstick pan
- Chop ginger, garlic, and scallions
- Sautee them until fragant
- Kill the heat, add rest of the sauce ingredients for later
Cooking the chiken
- In a big pot, preheat plenty oil until 150 degrees
- Preheat oven to 80 degrees
- Add marinated chicken to the only-flour bowl (the fourth one)
- Mix
- Shake excess flour
- Add chicken to the wet batter (third bowl)
- Mix
- Move into drier mix bowl (second bowl)
- Mix
- Lower them into oil
- Fry at light golden
- Remove into a wire rack
- Incrase oil temperature to 175 degrees
- Add chicken for around 90 seconds or until golden brown
- Transfer to wire rack again
- Transfer to oven
Sauce and final steps
- Bring sauce to a simmer
- Reduce by about half until consistency is thick enough to leave a trail with a spoon (add corn starch slurry if needed)
- Add cooked nuggets
- Toss carefully until coating
