Hard Cider Mussels
Ingredients
- Mussels
- Hard cider
- Onion or shallots
- Garlic
- Parsley
- Oil
- Butter
- Flour
Steps
Check the mussels
- Directly from the fridge, place the closed mussels in a bowl.
- Discard the ones with broken shells.
- Tap the open ones. If it closes slowly, it is alive and can go into the bowl. Otherwise, discard as well.
- Remove the stringy part if they have.
The roux
- Large pot with meadium heat
- Add oil and butter
- Chop onion or shallot
- Add onion or shallot
- Salt and pepper
- Chop garlic
- Add garlic
- Once fragrant, add a bit of flour for a roux
- Move until roux is ready
The sauce
- Add hard cider
- Wait until it boils
Cooking
- Add the mussels
- Cook for around three minutes
- Chop parsley
- Add parsley when shutting the heat
- Serve inmediately
When eating, discard all the mussels that are closed
