Fried Rice

Ingredients
For the rice:
- Chicken stock
- Garlic
- Pandan leaves
- Ginger
- Chicken fat
For the dish
- Garlic
- Shallot
- Spring onions
- Chilly
- Eggs
- Soy sauce
- MSG
- Sesame oil
- High heat oil
- White pepper
Instructions
The day before
Make a simple version of Hainanese rice with
- chicken stock,
- garlic,
- pandan leaves,
- ginger, and
- chicken fat.
Preparation
- Chop:
- Garlic
- Shallot
- Spring onions
- Chilli pepper
- Whisk two eggs
- Prepare the rest of the ingredients
- Soy sauce
- MSG
- Sesame oil
- High heat oil
- White pepper
The Cooking
- Wok on high heat
- Add high heat oil in the wok
- In order, add:
- Shallot
- Garlic
- Egg
- Rice
- Once it is almost ready, add
- Soy sauce
- MSG
- White peper
- Chilli pepper
- Spring onion
- Sesame oil
- Plate
