Almond Crusted Chicken Schnitzel

Ingredients

• chicken breasts
• parmesan
• almonds
• zest of a lemon
• cornflour
• salt and black pepper
• eggs
• dijon mustard
• oil

Steps

• Zest a lemon.
• Grind the parmesan.
• Add the almonds and keep grinding.
• Transfer to a plate and add the lemon zest.
• Beat the eggs and add mustard.
• Plate cornflour and season.
• Prepare a skillet with around a centimeter of oil and medium heat.
• Flatten or buterfly the chicken.

  Cornflour → Egg → Almonds

• Fry schnitzels for a few minutes on each side until golden.
