Almond crusted chicken schnitzel

Ingredients
- chicken breasts
- parmesan
- almonds
- zest of a lemon
- cornflour
- salt and black pepper
- eggs
- dijon mustard
- oil
Steps
- Zest a lemon.
- Grind the parmesan.
- Add the almonds and keep grinding.
- Transfer to a plate and add the lemon zest.
- Beat the eggs and add mustard.
- Plate cornflour and season.
- Prepare a skillet with around a centimeter of oil and medium heat.
- Flatten or buterfly the chicken.
Cornflour → Egg → Almonds
- Fry schnitzels for a few minutes on each side until golden.
